Celery Parsnip Salad

Parsnips... They're the veggie everyone loves to hate, they're a veggie that tastes best in the cooler seasons when their flavour is sweeter like winter squash, whereas the rest of the time, they have a bitter taste. This dish is one way to enjoy them raw.

What you need:

  • 2 parsnips, peeled and trimmed
  • 2 pieces of celery, peeled, trimmed and chopped
  • 2 or 3 tablespoons of mayonnaise (or your preferred equivalent)
  • salt and pepper to taste

How to make it:

  1. Using a grater, shred the parsnips into a bowl
  2. Add the celery and mix in a pinch of salt
  3. Stir in the mayo (or whatever you chose) to taste
  4. Sprinkle in salt and pepper to taste and stir
